Picnic Cole Slaw

Shopping List:

  • 3 Cups shredded green cabbage
  • 1 Cup shredded red cabbage
  • 1 Cup grated carrot
Dressing:
  • 3 tbsp vegan mayonnaise (such as Veganaise or JustMayo)
  • 1 tbsp Dijon mustard
  • 2 tsp rice vinegar
  • 1 tsp celery seed

Mixing your Goods:

Put the cabbage and carrot in a large bowl and toss to combine.

In a small bowl, whisk together the dressing ingredients – vegan mayo, Dijon, rice vinegar and celery seed.

Pour dressing over cabbage and toss.

Will keep for 2 day in refrigerator.
